1. SOURCING INGREDIENTS

Local high grade quality ingredients

Daddy Rack Tennessee Straight Small Batch Whiskey starts with the selection of the ingredients, all corn is sourced from local farmers within 50 miles of the distillery, high grade quality. The corn (80%), rye (10%) and malted barley (10%) are all then milled.

2. THE 72-HOUR SOUR MASH

A traditional Tenneesee method

After the mill follows a 72-hour Sour Mash, the ‘mash’ refers to the mixture of grain, water and yeast that is fermented to produce the alcohol.

3. DOUBLE DISTILLATION

Second ‘Doubler’ Pot Still distillation

First distillation is in a copper column still, followed by a second pot “doubler” still distillation, with a final abv around 67.5%.

4. MAPLE CHARCOAL FILTRATION

Filtered through maple charcoal

We take the same care with our filtration process, starting with the Lincoln Country Process which slowly filters the whiskey through a dense layer of sugar maple charcoal. By doing so, we are soothing and smoothing the spirit before it begins its journey to maturity in brand new American Oak barrels.

We lightly char the inside of our barrels

Once the harsh congeners and flavours are removed the liquid is filled into 53 gallon American White Oak barrels, with a light Char No.3.

6. AGEING & THE RACKHOUSE

Daddy Rack barrels are selected from specific locations in the Rackhouses. The Master Maker & Blender looks for barrels that have acquired a natural rich golden color, vanilla tones from the Oak, and highlight the elegant flavor of good congeners that are flourishing, ultimately growing an individual whiskey of great character and maturity.

7. THE MASTER BLEND

J.Arthur Rackham’s Master Blend

20 barrels are selected for a Master Batch Blend, but before batch blending, the whiskey has a light second Maple charcoal filtration to add a final smoothness. The 20 selected barrels are then batch blended using an original recipe (no coloring, caramel or any other nasties added!).

8. SMALL BATCH BOTTLING

Every bottle is Batch Coded with a signature from Daddy Rack - J.Arthur Rackham, Master Maker.
